The recipe
This recipe is meant to evolve. I believe there is always a certain trick or a brillant idea that can make it better.
If you think, your own recipe is better, please leave a comment and I will be happy to try and change mine if it is the case.
Apart from that, I am currently experimenting a version without gluten, I’ll let you know…
So, let’s see the current state of the recipe:
Strawberry tart (v1.0)
Ingredients (for 4 to 6 servings):
- Pastry :
- 200 g plain flour
- 100 g butter
- 1 egg
- 80 g sugar
- 1 pinch of salt- Filling :
- 400 g strawberries
- 350 ml milk
- 4 egg yokes
- 75 g sugar
- 30 g plain flour
- Vanilla essence (a few drops)Instructions :
- Boil the milk
- In the meantime, mix the egg yokes and sugar well.
- Add the flour (Don’t exceed the quantity otherwise your cream will become solid before the strawberries are added…). Mix well again.
- Add the milk gradually while mixing to avoid clumps forming.
- Put the mixture into the saucepan and heat to boiling. Simmer for 3 minutes while stirring.
- Add a few drops a vanilla essence, let it cool covered and then put it in the fridge.
- Heat the pastry in a pie tin for 15 minutes…(150-180 °C will be perfect), then let it cool.
- Pour the custard filling over the pastry and place the strawberries (cut in 2) on the custard.
- Ready to eat!
